Ingredients and spices that need to be Take to make Makhani Pasta:

  1. 500 gm Penne Pasta
  2. 1/4tsp salt
  3. 1 tablespoon oil
  4. 3 tablespoons unsalted butter
  5. 1/2 tablespoons garlic paste
  6. 2 roughly chopped onions
  7. 2 roughly chopped tomatoes
  8. 1 capsicum chopped in big dices
  9. 6- 8 garlic cloves -
  10. 1 inch ginger
  11. 1/ 2 tbsp garam masala -
  12. 1/2 tbsp coriander powder
  13. 1 tbsp jeera
  14. 2 red kashmiri chillies
  15. 4-5 cashews
  16. 1 tablespoon kasoori methi
  17. 4 tbsp corn flour
  18. As required Water to Boil pasta
  19. 2 bowls milk
  20. 1/2 tbsp pepper
  21. 1/4 tsp mixed herbs -
  22. 1 tbsp chilli flakes

Steps to make to make Makhani Pasta

  1. Add water in sauce pan and boil it.
  2. Add 1/4th spoon salt into it and 1 tabkespoon oil and boil.
  3. Once the water starts boiling, add in 500gms of Penne Pasta. Boil Al danté I.e. upto 70%. It will take almost 15 minutes to Boil.
  4. Once boiling is done you can just it one piece of Penne Pasta to check whether it has boiled (half cooked - 70%) or break it and if you see a white dot in between it means your pasta is boiled as per the requirement.
  5. Now strain the extra water from pasta. Note - do not throw the water, it can be used as a stock and gives amazing taste to the pasta.. you'll need the water later.
  6. Add some oil and salt over the pasta and mix it vigorously so that the pasta doesn't stick to each other before cooking.
  7. In a pan / kadhai add 1 tabkespoon unsalted butter, melt it.
  8. Add 1 tabkespoon jeera / cumin seeds and mix.
  9. Then add 2 medium sized onions which should be roughly chopped.
  10. Add 1 inch ginger and 6 to 8 garlic cloves and saute for a minute.
  11. Then add 4 to 5 kaju / cashews, 2 to 3 kashmiri lal mirch / bedgi mirchi and 2 roughly chopped tomatoes. Saute for a minute or two.
  12. Then add in 1 tablespoon of Garam masala, Coriander Powder - q tabkespoon and salt around 1 teaspoon. Saute again.
  13. Then add water around 1 glass and then cover and cook for 15 minutes until the veggies become soft and mushy.
  14. Once the veggies are soft and mushy let them cool.
  15. Once cooled add in the mixer jar add water and additionally add 1 tablespoon kasoori methi and then grind. Make a smooth puree of it.
  16. Now, time to make white sauce. Add unsalted butter to the pan or kadhai again. Melt it. Add 1/2 tablespoon garlic paste and then add 4 tablespoons of cornflour to it and make a roux.
  17. Once the roux is done, add milk little by little upto 2 bowls. Keep mixing until you get a sauce consistency or a medium thick consistency.
  18. Take care that the sauce should be completely lump free.
  19. Now add the Puree which we had made earlier.
  20. Mix both the sauces and hence our Makhani sauce is done.
  21. Then add 1 Capsicum which is diced and cook for 1 or 2 minutes.
  22. Then add Mixed herbs - 1 teaspoon, Chilli flakes - 1 teaspoon, Black Pepper powder - 1/4th spoon and salt as per taste. Mix all the ingredients.
  23. Once done, add the Penne pasta to it and cook for 2 minutes on low flame.
  24. Our Pasta is ready to be served. Can be served with Garlic bread, tastes amazing
